Hello, First time posing here on the forums. Thanks to everyone for all the other starter tips I have read so far! I received my S-1000 yesterday and am currently trying a test run. I loaded a total of about 40-45 pieces of charcoal including the starter coals and about 6 oz of wood. The charcoal I am using is a lump charcoal that has been stamped in to briquet form ( H-E-B Grand Champion Charcoal Briquets). The problem I am having is that my Weber is getting way too hot. The temperature keeps climbing and is currently at 305 degrees. The bottom vents are almost closed and the top vents are as closed as they can be while still having my Mavrick probe still stuck through the hole. The water level is still fine and when I open the lid I can see that there are a few bubbles coming up from the pan in the water. I am also cooking in Austin, TX, and the current temperature is 102 outside. Any suggestions are very much appreciated!!

Maybe because its lump it burns hotter. Either light less coals or close vents sooner. If 305 is dome then your pit temp is maybe 250? I would say that's good pit temp. I wouldn't worry about it. Just my opinion.

Get some binder clips and use them to hold the lid on. The lid is probably wrapped a little causing the spikes. You'll need to keep the upper vent closed more than normal as it is pretty hot out.
