Guys I tried to smoke some chicken thighs using the smokenator. They did not come out well, what temp should I smoke them at and how long should they go for? I want to get the skin nice and crispy.

26smokenator00 chicken thighs are a tricky piece of meat to do well. To get the skin crispy you need raise the kettle temp up to 300-350 degrees. I also like to put a butter rub under the skin which contains some herb and spices salt and pepper.

I think chicken thighs are hard to mess-up - BUT, I can definitely see where getting edible, crispy skin would be very difficult.(we toss the skin) Probably smoke without the water pan, or pull it for the final 1/2 hour ?
