Got my new Smokinator a week or so ago. Also had to purchase a new Weber Kettle after a sheet of ice 6 by 6 feet slid off the roof this winter and literally crushed it. (Minnesota winters are kinda ruff). Made a tri-tip on first try and ribs the second. Left bottom vent full on and 5/16 on the top. Started 20 charcoals in chimney till red and placed on top of loaded charcoals and 5 small wood chunks. Temp rose fast to 290 to 310. Bought the Platinum One Touch. Seal seemed real good. Am I missing something? Any help would be great!

Here are a few things to try: 1. Use 12-15 coals to start it. Starting with more lit coals can cause you to run the kettle hot. 2. Check your thermometer in boiling water, it should read 212. 3. If your temps still go above 240-250 at the dome, try using 3 to 4 large binder clamps to help prevent air leaks at the lid which can cause the temps to rise and can also be hard to control temps.

Thanks, Ed. Was my thinking as well. Used 20 in chimney cause it was 35 degrees out. The whole pit was on fire immediately.
