anyone use ac rib rack? I have a gang coming in two Weeks and will be doing 8 racks of baby backs. Does using a rib rack affect cook times? Should i mop since the ribs are more vertical than horizontal?

Should i mop since the ribs are more vertical than horizontal? I use rib racks all the time. Never noticed a difference in cook times. Sometimes I mop, sometimes I don't. I never see much difference. |

If the ribs are really close together, it will increase your cooking time. I use rack and rotate the ribs to avoid getting some overcooked
