Have my first chance today to try out my new smokenator 2600 on my new Weber 26.75" I'm running it with no food and have a few findings on the temperature I'd like some feedback on.
I live in Portland, OR (about 100 ft above sea level is my guess). I tested a few thermometers in boiling water Friday night. My ThermoPen was right on at 212*. My Maverick ET73 ran a little cool, logging about 6 or 7* under 212. Surprisingly the thermometer that came with the Weber was right on. So, long story short, I think I have a good handle on the temperature.
I have the Maverick tucked just a smidge under one of the vents and every once in a while I check with the Thermo-pen. Ambient temp started at 75* and we are up to about 86" this afternoon.
I'm finding that the temperature at the vent may be anywhere between 10 and 20 degrees higher than the Weber dome thermometer, (they are about about 9" apart). Not being an engineer, I figure that makes a little sense, I'm checking the temperature right at the exhaust.
Anyway, given that I want to manage the temperature in the dome rather than at the grill; do I want 240* at the dome thermometer or at the vent?
Also, I found I have a little bit of a leaky kettle; I used a couple of binder clips on one side (what a great tip) and had to shut the bottom vents down a bit.
