how long should I smoke a 13 - 15 lb turkey. I seem to be able to maintain my grill at 200 degrees with the smokenator

If you can get it to fit on the food support grill, it'll cook faster. I'd smoke it for about 6 hours, then wrap it in foil to keep it moist and finish it off in the oven. There are instructions in the manual on how to do this.

I did an 11-pounder a few weeks back for about 7 hours. In retrospect, I should have done it around 6. I was able to put it on the food support grill, and used water (but also opened up the top vents more to get a higher temperature). I also added about 10-11 coals every hour for the first 4-5 hours. By the end, the coals were almost too few, but at that point I had the glaze on already, so it was just finishing up.
Oh, and I used 2.75 ounces of cherry wood (broke into two chunks). It was a good amount of smoke taste, not too much. The leftovers were just as tasty as the first meal on it too!
