Thanks, jsperk. I love my Smokenator. Lately, I've talked about purchasing a WSM or a ceramic grill with my wife and she asked "why". I responded that it would be nice to do a long cook without having to periodically add more fuel, stir coals, and refill the water. She said, "I thought that's what you enjoyed about barbecuing". It made me think...

I have to admit I don't use my smokenator as much since I got my grill dome (ceramic). I also have an stoker temp contoller for it which with a ceramic you really dont need but it was a gift.It is nice doing a brisket and butt overnight without doing anything. I do miss using my smokenator. I'm going to have to dig it out and use more. The results from the smokenator are great. The fuel for the ceramic is another I use that more often also.

I noticed the thermometer probes, and tel-tru thermometer in the pic above. I need to replace a defective thermometer. How do you like the tel-tru? I assume this is a kettle mod? Do the probe wires hanging out of the kettle cause too much of an air/smoke leak?

thefist, yes, I love the looks and performance of my Tel-Tru. It is a kettle mod and the thermometer is accurate. I installed a Tel-Tru with a 4 in. probe, which brings the probe closer to the grill grate than other installations I've seen. If I had a choice to do the thermometer installation again, I would opt for the 2.5 in; the 4 in. probe gets in the way sometimes when I'm cooking a lot of meat. The probes come from my Maverick ET-73 and I now run the probes from the bottom vent holes (see picture), more to avoid pinching/damaging the probe wires than worrying about increased airflow. The Tel-Tru is my backup to my Maverick, giving me a sense of security that the temp readings are accurate. The Tel-Tru generally reads 10-20 degrees below the Maverick reading, which is understandable since the Maverick probe is actually situated at the grill grate level.
