Baby backs just after they came off of the Smokenator. Used a recipe I found on amazingribs.com. It was called "Last Meal Ribs" and then I used the "Vermont Pig Candy" recipe at the end Attachments:

I can't seem to load more than one picture at a time, so I had to reply to myself to show you the cross section. Check out that smoke ring! These came out so juicy and tender. Attachments:

Those look awesome. Nice job. How long did they cook for? Do you foill or non foil ribs?

They cooked for nearly 5 hours. It was raining on and off here so the kettle temp stayed at 225 for almost the whole cook. As much as I hate to admit it, I think I oversmoked them a little bit. I had smoke going for nearly the whole time and I believe they would have turned out a bit better if I had stopped the smoke about halfway through. I followed the recipe for last meal ribs at amazingribs.com and foiled them for about a half hour near the end. I added roughly 1 cup of apple juice to each foil packet, let cook for about 30 min, removed the apple juice from the foil, put it into a sauce pan, reduced it then added maple syrup. Let that mixture begin to foam, added a pinch of salt and a few shakes of hot sauce and glazed the ribs with that mixture right at the end. It was really good but just a too much hickory flavor from the smoke.
