I picked up a two pound steelhead fillet today. Brined it, then smoked it for about 2.5 hours. I added a foil pouch filled with asparagus lightly pepper, salted, buttered and rubbed with olive oil for about the last 45 minutes. Came out great. Once again, I can't figure out how to upload more than one picture at a time, so I'm replying to myself to upload several pics. Attachments:
