I'm smoking a 7.5# butt and plan to use a Texas Crutch in a few more hours when it gets up to around 165'. I know I'll have to wrap it tightly in foil but is it any problem if I then stick a probe through the foil into the meat? Will the hole in the foil from the probe create any issues of loss of the tightness of the wrap? I don't see any way around this if I'm still going to be able to monitor interior temp while "crutching".

You can always put a little foil over the probe and hole or put the probe in first then foil it.
