Here in Daytona Beach, FL it is kinda windy and overcast (about 10-14 mph). I started the bottom vent at 3/8 in and the top at 3/16 as per book. I am using Stubbs charcoal and a performer. I filled the S1000 with charcoal and lit 12 coals with the propane assist. I filled the water pan full. The 1st 20 min mark the fg was 129 and the lid was 165. At 40 min. The fg was 159 and the lid at 195. An hour later, the fg was 180 and the lid was 230. I fully opened the top vent at 90 minutes. The 110 minute mark, the fg was 201 and the lid 250. This works but I had a problem getting the fire up to 225 on the food grate under1.5 hours. I am assuming that the fg temp is the most important. Please tell me what I could improve.

By the way, on the gas assist I did not heat the coals for 15-20 minutes since this wastes lp. Once again what should I do?

Also the manual indicated that the s1000 was now being used with the bottom vent fully open. If this is true, I would only have to set the top vent to calibrate the performer.
