Well this weekend I gave the Smokenator its first workout. I went with chicken thighs because I read somewhere it was a pretty easy and quick smoke that was very forgiving.
I had a couple of issues on my first run. I could never get my temp above 212 at the grate and it took quite awhile to get to 190 when I decided to put the chicken on.
I think I know what happened that caused it to take so long to get up to temp but wanted to throw it out there and get some suggestions. I only had 12 stater coals and I think I needed to have a few more. Plus the wind was very gusty yesterday so I think that contributed to my problem.
Also at one time I actually had my chicken temp drop from 171 to 168 and hold there for about 30 minutes. I didn't think I would see the temp drop like that but it happened.
The chicken turned out very good. They had a good smoke flavor was was very juicy. Next weekend I am going for some pulled pork.

The wind will cause issues. Try to keep the kettle sheltered from the wind.
