I did my first big smoke this weekend. It was a couple of butts and some baby backs. Here is some S-View. Everything turned out pretty good but the ribs were a little dry. Next time I will wrap the ribs. Butts ready to go Ribs Ready Put the Butts on at 7:00 Butts on for 6 Hours ready to "Crutch" Time to add the Ribs Butts came off at 4:30 Then the ribs at 5:45 Not a bad smoke ring on the ribs. I would call it a success with the exception of the dryish ribs.

Thanks. That is what everyone said but I guess you are your own worse critic. You got that right. I always think something is ok and everyone says how good it is. I wonder if they are just saying that or to I judge my stuff a little hard.

Why do you have the water pan on top of the smokinator?

There are two reasons I run the water pan on top of the cooking grate.
1. Since this was a long cook I wanted the maximum space for charcoal. By putting the water pan up where I had it located I could pack the chamber with more charcoal.
2. The larger water pan allows me to run longer without having to refill. Which keeps me from taking the lid off which helps keep my temps stable.

Like that idea about the water pan on top like that. Will try that with my ribs next weekend.
