I smoked 3 racks of spare ribs today. Was my first use of the Smokenator. I was having trouble in the beginning, my temps were north of 300 even with the vents almost all the way closed. For the first hour, the temp at the dome never got below 280. I got on the forum and quickly realized I had a leaky kettle. I took some wood clamps and then the temps leveled out and held right at 240 for 4.5 hrs. I attribute the shorter cook time to the high temp in the beginning. That said, I had the best ribs I ever made! Juicy, nice smoke flavor (apple) and a nice smoke ring. I hope to repeat next week with more ribs and a pork shoulder.
