I found this awesome recipe on a website that begins with Y and ends in Tube. I thought I'd share this.
You will need some large jalapenos, some cream cheese, some of those sausages about an inch long(I think they're called "Lil Smokies"), your favorite rub, some grated cheese of your choice. I like the Mexican 3 cheese blend, and some bacon.
You will first cut the stem end off of the jalapeno and slice it down the middle. Scoop out all the seeds and veins. Fill the jalapeno halves with cream cheese just even with the edges of the "boat". Sprinkle with your favorite rub. place one of the Lil Smokies on the cheese filled boat Drop on some grated cheese. Wrap it with a half slice of bacon making sure to keep part of the Lil Smokie sticking out of the bacon blanket. Now smoke um! I smoked mine for about 2 hours with hood temp around 220* MMmm I wish I had some pictures to show you. I will post some the next time I do these Lil turds ;D

I get so many requests for the ABT's. Got to be one of the best appetizers I've eaten. I use basically the same recipe except for the cream cheese filling. I just spice mine up with a dry rub mix that I concocted. I'll mix up the cream cheese along with the rub the day before and let it sit in the fridge overnite. When I'm ready to fill the peppers, I get the cream cheese up to room temp and put it into a big zip lock bag. I then cut one of the bottom corners off the bag and squeeze the cheese out into the pepper. Makes it easier to fill 40 to 50 pepper halves for sure. If anyone is wondering, a big batch of 50 needs 3 boxes of cream cheese
I like the addition of the mexican 3 cheese blend as a topping. I'm gonna try that the next time I make these. Thanks
