I'm a little confused. Should I be more worried about the temp at the grate or the dome temp. I have a weber kettle ,maverick double probe and smokinator.

You don't cook at the dome, you cook on the grate. That is the temp you need to monitor and your Maverick will do just that. Ignore the dome temp
