Basic Steak rub, very good
Equal parts:
Garlic Salt Seasoning Salt and Coarse Pepper
Once i know my steak is close to med/rare I'll add fresh minced garlic on the top of the steak and let it sweat for about 30 seconds, Im a big fan of garlic btw

I have tried different combinations of wood for smoking. The best wood for Santa Maria TriTip is Red Oak. It has the right flavor for this meat. Get it on the web if you can not find it in a store and forget the chain markets. Gabe
