This may be a dumb question but ... just ordered a Smokenator.
Q: After you set it up and put the food on, do you keep the dome air-vents OPEN or CLOSED?
I'm not clear on this....
Also, do you put the meat rack over the top of the Smokenator so you'd have to remove that on the hour to replenish coals, etc.?
There are a few fine points I'm not clear on. Thanks!

Hello You can use the dome went to regulate the temp of the grill.
The base setup is to have the bottom wents fully open, and the top went should have about a 6 mm opening, so it should be partially close. I think that setup is recommended in the smokenator instructions.

Also keep the upper vent opposite of the smokenator. If you have a hinged food grate you would put that section over the smokenator so you could add charcoal/wood chunks easily.
