ok so ive had the smokenator for a while now i have only smoked ribs i have maybe 10 smokes under my belt ive tried babybacks,back ribs,spare ribs with mcormick grill mates pork rub and a couple from amazingribs.com with sweet baby rays and k.c. masterpiece sauce and i've been using webers apple wood chunks and have followed the smokenateros instructions to the T!!! and using a few tips on here i've learned but im still far from having the best ribs ever they are not bad but not good either i almost wanna say there is a off taste for the lack of a better description

I can't remember the instructions but how much wood are you using? Is it a bitter taste? Do you have a lot of white heavy smoke coming out when you put the ribs on?

You might have a build up of creosote or mold on your kettle and or lid. I would suggest a thorough cleaning.
Too much wood could also be the culprit as jsperk suggested

i have a brand spankin new grill so its clean and i used 6 ounces of wood exactly and made sure not to use any chunks with bark on it i have digital food scale i used to weigh the wood chunks i throw in 2 ounces once the grill comes up to temp then 2 ounces more every hour after that ..one thing i did notice soaked or not soaked the wood bursts into flames almost instantly when i throw it in or when i open the lid and the smoke doesn't last very long it may be a fair amount of smoke at first too nothing very quickly i know about making sure the lid is on right and using the clips on the lid so im not sure what it could be
