Hi All I smoked my first pork butt this week-end. Started out easy (I thought), and used a piece just over 2.5 lbs. At 1.5 hr/pound, I figured it should take about 4 hours. Well, at 3 1/2 hours, the butt was still at about 160 degrees, so i wrapped it in foil and put it in the oven for another hour. Still stuck at 165!
Ended up cheating and using the slow cooker crock pot to get it pull-able, which worked just fine. The butt tasted wonderful, but the process was a little frustrating.
Was I a victim of the dreaded "stall" ? Any ideas on how to get past this in future?

Probably going to be more like 1.5-2 hours per pound. Give it some time. It may stall out and just let it ride until it comes up to temp.
