I just bought the Weber 22.5 and ordered the smokenator 1000. My question or concern is how do you control the temperature without a built in thermometer. Example: how do you maintain 225 degrees for 6-8 hours?
Can't wait to have my first smoke. Looking forward to that first brisket. I am a newbie with this setup even though I cook food on the grill a lot.

You need to use a thermometer in the upper vent or at the grill level. Without a thermometer you are going to have issues maintaining the temperature.

You definitely need a thermometer. I always drill and put a short stem one in the very top of the dome. Then I look for 235-245 degrees on it. This will put the temp at the grill at about 225. Follow the directions that come with the SN. Keep the bottom vent fully open and adjust the temp with the top vent. How wide open the top vent will need to be will depend on outside temps and wind conditions. The length of time will of course depend on the weight of your meat being smoked.
