I smoked a tri-tip when i first received for exactly 2 hrs at the recommended temp. I found it was well done not over cooked at all. So i smoke another one a 2nd time for an hr and a half i must say it felt like i was eating a filet. I also smoked a turkey, for 12-14 hours. Kinda hard refilling coals and what not but in the end it was worth it, tasted great and family really enjoyed it
