How high does the hovergrill sit over the main cooking grate? I'm curious how much room I'll have to work with with thicker cuts of meat.

There are 2 1/2" under the hovergrill. I measured mine while I was grilling some steaks this evening. I haven't tried using for pork butts or whole shoulders but it is fine for large briskets, ribs and smaller roast beef cuts. Half chickens also usually fit under it also.
