In the case of smoking ribs using the Maverick, is it OK just to use the barbecue probe only to monitor the grill area temperature? Since I will be cooking from 4-6 hrs. max, can I just test the rib temp using a hand held digital thermometer instead of using the meat probe of the Maverick. It seems like there won't be a sufficient area to place the meat probe into the ribs. Make sense?......

You can do that. The food support grill will be 20-30 degrees warmer than the dome temperature. If you get temps up too hot, you'll start burning through the coals faster.

Yes Ron you can. Shoot for 225 or so on the grill and you'll be fine. That's what I do.

I use the Maverick as well, and clip the probe to the top grate to the side and about 6 spaces from the front, (opposite the Smokenator which I have in the rear)and level with the food. I shoot for 225 as well, but you really can't check the meat temp on ribs very well, since the bones have a big impact and the meat is so thin. There are quite a few ways to test if they are done out there on the net.

I have a quick question regarding the Maverick digital T733 and the One Touch Weber kettle. Do you have to drill holes for the wires or can you place them over the edge with the lid sitting on them without getting any leakage? I am asking because the Maverick is arriving this week and I really do noy want to drill holes in my brand new kettle.

Welcome to the forum halfcent. No you don't need to drill a hole though it is more convenient and allows the lid to close tightly. Having the leads under the lid will not cause any more leakage than having a small hole. One note is that you will probably need to replace the leads by there being pinched by the lid every 6 months or so. This is a big problem with the Maverick probes. There was a discussion on this just recently. Drilling a hole is not difficult and does not damage the grill. I drill a hole for a dome thermometer every time a get a new kettle and have been doing this since 1979. Just got my 3rd kettle last year so that's one every 15-20 years or so. I smoke my own bacon and ham from a whole hog I get from my neighbor.
