Marinated some chicken and smoked them in cherry for two hours then increased the temp and finished cooking it and put some marinated squash on for a final hour of cooking. Came out great. As I put the squash on. Final cook as I was ready to take things off. Tom aka NC

Looks really yummy, Tom. We did some back ribs and corn today that turned out nice as well. Can you give me some details about your cook? What did you use to marinate the chicken and the squash? Also, since i have never cooked squash before, how do you do it? Direct? Indirect? Time? Hungry minds want to know.

Hi Allan. Today I marinated both the chicken and the squash in a balsamic Italian marinade. I took the skin off the chicken legs before doing so. Marinated them for 3 hours and the squash for 2. Smoked the chicken for 2 hours at 225 with the cherry wood and the SN and then put the squash on and increased the temp to 300..
This time I did the squash indirect since I had the SN set up and cooked them 1/2 hour per side. After 2 hours of smoking the chicken I took the water pan out and let the temp raise with the chicken as far as it could be from the coals with the squash closer to them. I cut the squash in 1/4" slices the long ways. I also cook them on direct heat when direct cooking things that take a shorter amount of time. They take maybe 10-15 minutes a side. You just have to experiment with what your cooking to get the timing down and the temp of your direct heat.
