Did some spare ribs today. They were Tyson brand and weighed 4.7 lbs. before trimming. Here is a picture of the trimmed ribs. Forgot to take pictures of the finished trimmings or ribs. Total cook time on the ribs was 6.5 hrs. Took the trimmings off after 4 hours. Cook temp was 225 - 235. Tom aka NC

Tom, how'd they come out, especially the trimmings? Looks like a nice trimming job.

Jay they were great took the trimmings off early since they are thin if you cook them to long they can get tough. The ribs were perfect, easily pulled off the bone with a light bite. Wife said probably the best I had done with the SN. LOL No wind today and was able to hold a constant temp. Woods used 1hr. hickory, 5hrs. apple. Here's a picture of the left over ribs and trimmings. Upper center is a rib on its side. Allan looked at my lid and really need to decreosote it before the next smoke. Tom

Hey Tom, nice looking rack. Makes me hungry just looking at them. I really need to get me some hickory and apple wood. I bet my lid looks similar to yours. I need to give it a good cleaning. Still need to get out and get me some cleaner. What was the name of the stuff you use?

Hi Allan. CITRUSAFE BBQ GRILL CLEANER. Found it at Lowe's. It's in a blue spray bottle in the bbq section. Just sprayed it on and let it set a couple of minutes and then took 3M nylon scrub pad to it. Made the top vent a lot easier to move also. I move the vent around as I am spraying it to make sure I get underneath all of it.
