Allan, thanks for the new section. Also, kudos for suggesting we do avatars. My handle on the board is Whiskey Charlie; when I learned the mneumonic alphabet (back when Christ was corporal) "W" was whiskey and "C" was Charlie. My given name is Charles, Charlie to my friends; and whiskey? Well, I'm not much of a drinker but WC appeals to my sense of humor. I'm in Sacramento, California and I've been smoking in Weber kettles on and off since 1980. I formerly used a side rail with an offset fire but had to tend the fire hourly adding charcoal and chips; with that setup if you were a little late, the charcoal burned away. Also, I don't think I ever got my heat down below 350. With the Smokenator, I load up that baffle and am good for hours, of course I still stir and add water hourly but I may go to a larger water pan, a la Tom, and try pushing that out to two hours.

whiskeycharlie glad to know you. Hope you will stay on the forum and add your knowledge and any insights that you may have as you learn to use the SN. Yea I use a 1/2 loaf pan now good for about 1 1/2 hours. That way if I smoke at a higher temp I don't have to worry about running out of water.

The more participants we have on the forum the better it becomes.

Hi WC,
Your explanation of your name brings back memories. In Canada we have a CADETS program. There are Army, Sea, and Air cadet programs for kids, and I was in the Sea Cadets. That is where I learned the Alpha, Bravo, Charlie, etc myself. I think you have one of the coolest handles. I envy the nice weather you must have year around for using your Weber. I think I can make it to Nov. or Dec. but have little hope of using my Weber in Jan. and Feb. and Mar., but we will see how it goes.

I really have high hope for this new section, and I feel the avatars really help to put a fake face to a fake name.
