My wife, Susan, really loves my BBQ chicken. So much so, she requested that I make this for her today, which is her birthday. Now I have always been mostly happy with my BBQ chicken with the Weber + Smokenator, but I felt there was some room for improvement. Today I butterflied the chicken and used a different cooking style, and man-o-man did it turn out great. Here is my chicken, butternut squash, and home made mac&cheese ready to start. Here it is all done. And here it is plated up. (The cauliflower was done in the microwave). Check list: Golden brown? Check. Crispy skin? Check. Smokey flavour? Check. Juicy breast meat? Check. Happy wife? Double check! The results were so good that I am going to post the details in the BBQ Techniques section so others can give it a try if they feel so inclined. It will also give me a place where I can refer to if I forget just what I did.
