Just thought I'd say howdy. I've been using Weber kettle grills for many years but just picked up the smokenator recently. Cooked a couple of racks of St. Louis style ribs last weekend and working on a brisket as I type this. Neat product. I hope the brisket turns out as good as the ribs did(they were excellent if I do say so myself).

Hunt welcome to the forum St. Louis ribs are a good place to start and glad yours came out well. Brisket is one of my favorites. Are you doing a whole packer or just a flat. Hope it comes out well. Document your cooks down in the S-view section.

It was a whole packer. It was about 12.3lbs when I bought it. I trimmed a BUNCH of the thick hard fat from it before seasoning. Probably wound up around 10-11lbs. Cooked for 11 hours at 210-225 degrees at the grate. Turned out awesome. I'll post a report in the S-view section. I've been smoking briskets on large steel pipe smokers forever. Just doesn't make sense to fire it up for one brisket or a rack or two of ribs just for the wife, kids, and I. That's why I bought the Smokenator.

Welcome Huntnetime. I hope that you find the Smokenator to be as useful as the rest of us do. I am sure your experience will be a benefit to everyone here. Please share as much as possible so we all can learn and get some recipe ideas.

If I need to cook a couple of briskets, a couple of racks of ribs, and sausage all at once for a big crowd, then I'll use my big heavy pipe smoker. But, I don't like using it for smaller jobs like I can with the SN and Weber grill. If I'm just cooking for the wife, my sons and I and maybe a few more people, it is PERFECT for the job. On top of that it produces GREAT results.

League City is between Houston and Galveston and is what I would call Southeast Texas. I live in Corpus Christi. The area is known as the Coastal Bend due to the curvature of the coast here. Just about anything South of Victoria, Tx is considered "South Texas" by most. It is definitely "mesquite" country down here. It is used a lot in grilling and smoking alike.

Hi Sonny, I was in Corpus Cristi once for a very short time while in the Navy, only time I have been in Texas 6 weeks of Navy training. A group of people from the yacht club there hosted us to sail on there boats one Saturday. It was way back in 1972. Very friendly people.

CBRAC has tried to shut it down a time or two, but we have good legislators that fight for it and have kept the lights on. It's not a bad town. It has its share of problems. Two of which are almost at epidemic levels in my book(drug use/drunk driving). I've been here for almost 20 years and love it here though.

I'm glad to hear that NAS CC is still there. I think all towns now have there drug and drunk driving problems. The town I live in is on the edge of the Great Smoky Mountain National Park. Last week they busted two guys with a $2 million field of mary jane in the park, plenty of moonshine to.
You never know what is going on around here. 80% of the county is national park, national forest, or lakes, roads and state forest property. Part of the road to get to our house is National Forest road.
It is a neat place to live a lake 6 miles away to launch our boat and fish, deer and wild hogs to hunt for if we wish. I'm not really a hunter.
You take care and keep smoking with the Weber, I try to do something 2-3 times a week.
