I smoked a Turkey today with cherry wood. It weighed 16.77 lbs. I cooked it at 325 until it reached 160 in the thigh with my Maverick then tented it for an hour. Total cook time was 3.5 hours. Cherry wood produces a dark skin so this is what it looked like when done. Wishing everyone a Merry Christmas or Happy Holiday if not of the Christian faith. Tom

Thanks for the pic, Tom. I did a chuck roast but unfortunately I didn't take any pictures. It came out great though.
Did it taste as good as it looks?

Jay sorry for the late reply, but yes it was as good as it looked and nice and moist. Saved the bones for broth.
