Well friends, it is spring again and I'm going to try a new pastrami recipe. See the link to Mike Ruhlman's blog. blog.ruhlman.com/2011/09/how-to-make-pastrami/I stopped to visit the butcher & ordered a nice piece of brisket with ~1/4 inch of fat for smoking. I've got all my herbs and spices lined up. I'll put the meat in the brine on Monday the 23rd and smoke on Saturday the 28th. Looking forward to another great season! Whiskey Charlie
