I am pleased to join you in this Grilling and Smoking adventure! I am Eonefiire and just purchased and assembled my Weber Performer Premium 22 in. Grill last evening and started to learn how to control it and understand it! I also am awaiting the delivery of my Smokenator, it is en-route. I am looking forward to sharing and learning from you and thru Amazing ribs. Little bit about me... I am from Long Island NY and am 62. I work in the Fire Alarm industry in the NY city area and also volunteer as a fire fighter in my community for over 30 years. I have always put out fires and now look to control it. On with the adventure and thank you all.

you are about to spoil yourself from BBQ purchased anywhere else. Sure, you might make a coupla mistakes early-on, but once you understand the goal and can do a reasonable job of directing the cooker towards it - you can make BBQ as good or better than you can usually buy.
chicken thighs are a good first time BBQ choice. hard to mess-up and cook fairly quick. If no one likes to eat the skin, you don't have to worry about too much smoke either. But really, after some self-education, you can just go for it!

eonefire welcome to the forum. Thanks for your work with the volunteer fire department. I agree with 1lt start with easy things first, chicken thighs, and thick cut pork chops are great 1st things to smoke. I also advise new people to keep a note book of there smokes for several months, weather,(temp,wind,rain,clear,etc.), vent settings, meat cooked, grill temp, time it took to cook, etc. This will allow you to go back and set your kettle up when you have similar conditions instead of having to guess again. Don't be alarmed when you can't keep the temp at a single temperature say 225. It will vary a little bit from say 225 to 245, no big deal. This is caused by breezes, you just don't want it to spike to 300 or more.

Thank you for the replies and encouragement!
I fired up the smokenator on its first run and have been watching it I do have a Run time log thru Amazing ribs. And will watch and record all my adventures.
I enjoy the challenge and the new learning.
