Craig looks delicious, welcome to the forum. When you get your SN keep a notebook for the first few months of the weather conditions, cook temperature, time of cook, what you are cooking, etc. After a while you'll be able to refer to it instead of having to guess about what to do. I love St. Louis Ribs, the only kind I do any more. Can't justify the cost and lack of meat of baby backs. Plus the trimmings of the spare ribs to make St. Louis are done about half way through and make nice snacks.
