How hot can you get the temperature up on the smokenator? I figure the best way to get the temp up is to remove the water pan. However, will removing the water pan dry the meat out? Any help would be greatly appreciated.

You can easily get the SN to 300-325 and I routinely do so for my turkey smokes. I don't like it that hot for pork or brisket and keep it below 275. I always use a water pan. Start with 15-17 hot coals and all the vents wide open.
