Haven't posted any pics here for a while. Smoked two heavy racks of Smithfield ribs I got at Walmart for $1.72 a pound. These are great ribs if you can get them and on sale I stock up on them an put them in the freezer. They are so heavy 2-3 make a meal. I put them on at 2 pm and had the trimmings for snacks at snacks at 6. Ate dinner about 8:30. Here are some pictures Trimmed with trimmings Finished and showing how to know its done. These are more done than I usually take them as they are falling off the bone and I like a little firmness to take a bite off the bone. But forgot to put the corn on early enough

My brother in law and father in law both did ribs for Labor Day...I figured I better mix it up a bit with the brisket. Nice job NC...those look fantastic.
