Guys,
My chimney and gas assist really get those coals roaring. I find myself unsure sometimes of exactly when to start cooking. Do you guys wait until all of the coals are solid white, or just once you know they're going good, and some are white and others half or so?

I'd say yeah, kinda what you said. I don't mind the risk of starting a little cool. I DO think it's important to go with 12-15-20 or so briquettes, maybe depending on what your target temp is and the size of the briquettes (some brands are a little smaller - like Stubbs). My chimney never seems to get each one at the same amount of 'ash-over' and I'm not waiting aroind when I could be heating the pit.
As long as you know you're not gonna have to do a re-light.
others here have more experience with the SN than I do though.

I go to about 2/3 white on all the coals, they will finish up as you heat up the kettle. You will never get all he coals to the same point of ash cover. Some will be fully ashed over and some 2//3.
