Hello Smoking Experts. I bought two small brisket flats from Walmart that were both 2.5 lbs a piece. Since they were small I figured my cook time should have been about 6 hours. I had to pull them at the 9 hour mark as they stalled at 180°. Finished them in the oven. I even wrapped them at 150°.The outside temp was in the low 30's. Did I miscalculate my cooking time?

Arnie I don't know what your weather conditions were as you smoked your briskets. But you had 5lbs of meat on your grill and should have figured on a minimum of 1.5hrs per pound or 7.5 hours using the SN. With the weather your temps you described I would expect 2 or 2 !/5 hours for your 5lbs of meat that would translate to 12.5 hrs . I am also an old school guy and never wrap my brisket till I take it off the grill at 190-195. Then I will cover it tightly with foil and equilibrate the juices and temp through out the meat.
Seriously brisket is the most difficult cut to learn to do well and two small pieces like you had would have driven me crazy. Try again with a nice flat of 6-8 lbs.
I am also really surprised you were able to find brisket flats that small at WalMart. I usually like to smoke a 5-8 lb flat. Unless I can find a whole packer brisket which I really prefer, a 12-14lb. whole packer is great.

Thanks Tom. I appreciate the feedback. I was shocked to find them at about 13 bucks a piece at that. They weren't the best quality but for the price they were okay. I have to learn to start at the crack of dawn or before because I didn't get them on until 10:00 am. I thought I'd be eatin' brisket by at least 5 pm. Another learning experience.

Yes my only problem with brisket is the price of it these days, that was expensive brisket. It is now a special treat, instead of something I would do once a month. I still have a packer in the freezer that I got when they were $1.69 it is being saved for a good group get together as it is about 13.5 lbs.
