This weekend, I cooked a butt and a brisket. The Butt was done first. It weighed less than the brisket and was also on the elevated grate so, it was exposed to higher temps. Later, I experienced a grease fire in the ash bucket! Due to collected drippings and sweeping of ashes w/sparking charcoal pieces I guess? It put a nasty burned taste onto the brisket bark. bad enough I will need to cut as much bark off as I can. Hoping today's sandwich tastes better than the first 2. First time I had this happen - something to watch for.
I'm guessing dumping grease/ashes 2-3 times is gonna be the best way to avoid this in the future?
