Kinda confused - when cooking chicken, can you cook it directly on the grill grate (as mentioned in a topic in another section) or use some type of pan set-up and cook the chicken parallel to he smokenator water pan (as mentioned in the instruction book)

If you have a large bird, like a Turkey, you could do the pan set up, and cook it on the charcoal grate, this gives you more room. Don't forget, the coal grate temperature will be lower than the cooking grate, so you may have to bump your cooking temperature up higher. I've been able to do 2 beer can chickens on the top grate, and still not have problems with the lid.
