I am anxiously awaiting my hovergill which should be arriving any day now. I plan on smoking 3 racks of ribs this weekend, but was wondering if anyone had any ideas about what I could smoke on the hovergrill. Could I do a pork butt on top, or does that need to be lower on the main grill? Chicken? Anyone whose done some combo cooking would be a great help!

I smoked 2 racks of beef ribs,1 rack of St. Louis on the hovergrill, and 2 racks of baby backs on the cooking grate. I used a rib rack to fit them all in. I used a ET-73 to monitor temps, loaded 52 coals, 2 chunks hickory, and filled water pan. when temp came up to 225 put on pre-warmed ribs, temp. started falling on cook grate as meat absorbed heat, with vents open 100% I could not get cook grate back up over 190, no problem w/ hovergrill temp. rotated meat every hr. foiled after 2.5 hrs. for 45 mins. back on un foiled till some bone tips were showing. ribs were very tender and flavorful.It involved a lot of work cooking that many ribs at once, you must watch them carefully and rotate to prevent over cooking. this was my 1st. time w/ the hovergrill and I almost over loaded my self w/ that many ribs.
