Make your own chips

I have an old apple tree I need to prune back badly, and I was thinking of saving the wood to use for smoking. Anybody have advice on the best way to do this? Does the wood need to be dried first, how to chop into small pieces, etc. Thanks.

I took out a tree two years ago. I let it sit a year and cut it with a ax and hand saw.
