Don't over smoke your food. Mesquite Coals add favor to your meat on top of the wood you use. It also depends on the type of meat you use to how much smoke will be absorbed. For Example: Chicken absorbs the smoke more than say Ribs. So take this into account when smoking your Chicken. Thanks Gabe

Word to the Wise. I wanted to report I got a batch of mesquite that had alot of termites in the bark. Being a lazy fool, I figured that the old termites wouldn't add flavor. Well, it didnt taste right as you smarter ones know, I cut out the bark the next time and had better resuts.. Best to shed your bark..
