I'm planning on doing a turkey on the grill, I've had good luck doing ribs with the smokenator which keeps my dome temp around 225*F without problem. However, I'm a little worried I won't be able to get my temps high enough using the smokenator to properly do a turkey. So I came here looking for any tips or experiences you guys have had doing a whole turkey. www.amazingribs.com recommends maintaining at least 325*F for the duration of the cook, what is the best way to achieve the higher temps? Should I just load with more coals, or eliminate the water pan? Also, would you recommend brining the turkey? Feel free to chime in with any addition tips that you think a newbie might find helpful, thanks

Craig no problem. Grocery store turkeys are brined to 10% so no needed brining needed. I get the grill up to 300 or more by opening the vents wide open and use 15 coals to start it. I love the taste of cherry wood. A thermometer like Maverick ET732 is a must.

Am I correct in saying the ET732 has two probes, one for the dome temp and one inserted directly into the meat?
I'm currently using a cheap digital oven thermometer that I snake through the top vents to monitor the dome temp, then use a different thermometer to check the meat whenever I take the cover off to tend the coals.

Partially correct Craig. One is for is for meat temp it is hooked and has a pointed end. The other is for grill temp and comes with bracket that lets you hold it just up off the grill and has a blunt end. The beauty of the 732 it gets the thermometer down where the meat is being cooked. Also make sure you get each probe plugged into the correct inputs on the sender. Make sure you read and understand the instructions correctly. I missed the point that you have to turn on the receiver 1st and then only have 30 seconds to turn on the sender.

LOL! I have to read the instructions every Spring 'cause I forget to turn on the receiver 1st and that I only have 30 seconds to turn on the sender.
